Crispy Jicama Chips…after some trial and error!

I was in Safeway this weekend and came across these veggie chips in the bulk food section…photo 1(25)Yummy, right?!? They are much like Terra chips only a bit thicker and it had different veggies like green beans and carrots.  Sounds weird, I know.  I’m not gonna lie, I was scared to try the beans, but they were really good!  I found out the brand is Open Nature. The ingredients are: Sweet Potatoes, Squash, Taro, Carrots, Green Beans, Canola and/or Palm Fruit Oil, Fructose, Sea Salt.  Manufactured in a facility that processes peanuts, tree nuts, milk, wheat, egg and soy. Made without artificial flavors or preservatives. They have 130 calories per 28g serving (about 15 pieces), 22g Carbs, 4g Fat, 1g Protein, 125mg Sodium, 4g Sugar.  All in all, not too bad if you’re craving something salty but they could have left out the fructose and although they are vacuum fried, they are still fried –…

Buh-Bye HFCS Heinz, Hello All Natural Homemade Ketchup!

We’ve all heard the dangers of High Fructose Corn Syrup (HFCS); it causes obesity, liver damage, diabetes, heart disease, tooth decay and more. It is most commonly found in soft drinks, fruit juices, salad dressings, cereal, and condiments – including a staple in our household, Heinz Ketchup. I’ve been eager to try making my own ketchup. Originally, I was going to make it straight from tomatoes, but opted for a recipe with organic tomato paste instead. It was super easy to make and SO much better for you I don’t know why I didn’t try it earlier! Even my ketchup lovin’ husband approves!ketchup2Makes 2 cups

1 large can organic tomato paste (13 oz)  – make sure the only ingredient is “tomatoes”
2 cloves of garlic
½ small white onion, diced
1/4 cup organic apple cider vinegar
1/4 cup water
1/2 Tbsp powdered stevia (or any sweetener of your choice, honey, agave, maple syrup)

Low Sugar PB2 Protein Bars

I recently found another protein bar recipe that I am in love with! It might just be my favourite so far. I got the recipe from this website. They are super easy to make and involve my favourite ingredient ever invented – PB2.  You can also substitute natural peanut butter, but the nutritional info would change.protein barIngredients

1 cup gluten free or regular quick oats
1/2 cup of your favourite protein powder – I used a vanilla flavour
2 Tbsp ground flaxseed
1 tsp baking soda
1/2 tsp salt
1 Tbsp powder stevia or sweetener of your choice
1/2 cup PB2 (can also use regular peanut butter)
1 cup apple sauce
1 tsp vanilla
1/4 cup egg whites
